Coconuts! .



I know what you are all thinking. Coconuts! No way. They are full of saturated fats!They can`t be good for you.

Like eggs coconuts have be given an unfair rap and they are finally getting their due if you put aside the unfounded fears of saturated fatty acids drilled into our pysches.

"Once mistakenly believed to be unhealthy because of its high saturated fat content, it is now known that the fat in coconut oil is a unique and different from most all other fats and possesses many health giving properties. It is now gaining long overdue recognition as a nutritious health food.....Coconut oil is composed predominately of medium-chain fatty acids (MCFA), also known as medium-chain triglycerides (MCT)......MCFA are very different from LCFA.(other dietary fats) They do not have a negative effect on cholesterol and help to protect against heart disease. MCFA help to lower the risk of both atherosclerosis and heart disease. It is primarily due to the MCFA in coconut oil that makes it so special and so beneficial."

Who knew? I have since bought virgin pressed organic coconut oil for cooking(it tolerates high heat without oxidizing) and coconut milk for coffee. Yes. I was looking for a substitute for coffee cream and discovered the thick coconut milk is perfect. It even looks like there is cream in my coffee and imparts a nice flavor to the brew.I also heard that mixing coconut milk with pineapple juice forms the basis of a wonderful(virgin) pina colada smoothie.


Another advantage of coconut oil is it`s use as a carrier oil for essential oils and as a skin balm...especially during the drying months of winter.

we use a lot of coconut milk and cream. it's yummy and healthy! the nutritionist that i used to see suggested that i have coconut cream daily...it's very good for your brain! never thought to put it in coffee though...good substitute! i just recently found a recipe for rice pudding made with coconut cream (wheat and dairy free). i'm hoping it will make a nice treat!

Nice. Supposedly coconut oil is by far the best oil to cook/bake with, can be used for healthy skincare and,from accounts,helps thyroid function.
