My Paleo Staples - Celery

Not only is celery available year round and is affordable but this under rated vegetable is loaded with goodness.....

"Celery leaves has high content of vitamin A, whilst the stems are an excellent source of vitamins B1, B2, B6 and C with rich supplies of potassium, folic acid, calcium, magnesium, iron, phosphorus, sodium and plenty essential amino acids."

For those adherents of paleo nutrition or others on a reduced salt diet(high blood pressure) celery actually possesses an unique trait....

"The natural organic sodium (salt) in celery is very safe for consumption, in fact is essential for the body. Even individuals who are salt-sensitive can safely take the sodium in celery, unlike table salt (iodised sodium) which is harmful for those with high blood pressure.``

Perhaps more importantly celery has been associated with male pheromones and are reputed to inhance male virility and ├Čncrease semen volume. Traditionally noted as one of nature`s aphrodisiacs it contains Andresterone. This is the same hormone that men naturally make in their bodies that stimulates sexual arousal in females.

Now that I lost you fellas as you are heading out to the market rather than reading the rest of this(wink) let me suggest that you wrap celery in tin foil then place it back in the plastic bag. For whatever reason once back in the fridge the tin foil keeps the stalks crisp longer as there is nothing worse than limp celery...among other things(wink wink).

I used to eat it slathered in Cheese Whiz then moved to peanut butter but since following paleo I have acquired a taste for plain old celery, either eating the stalks or dicing it up and stir frying it along with my usual paleo meals or in salads.
